How to ascertain restaurant persons worth….. When dealing with cooks… they fall into no less than 30 categories.


1- Alcoholics

2- Functional alcoholics

3- Illegal aliens

4- High school kid- first job

5-Trained illegal aliens

6 Experienced wait staff trying the kitchen

7- Functional alcoholics with FOH experience.

8- Untrained high school kids

9- Busboy promoted to salad station

10-Experianced line Cook with no references

11- Dishwashers being promoted to salad station

12- Experienced High school kid that is flirting with making this business his life

13-Trained and experienced functional alcoholics

14- Trained and experienced line cooks with at least 2 years fast-food experience.

15- Trained and experienced line cook with full service experience.

16- Trained and experienced functional alcoholics that have run a kitchen

17- High volume line dawg with 1 out of two references.

18- High volume line dawg with 2 out of three references.

19- Certified functional alcoholics that have washed dished, prepped, and have at least one good reference.

20- Certified functional alcoholics that have washed dishes, prepped, and have at least two good references.

21- Lifer (has done everything for at least 5 years, uncertified)

22- Lifer (has done everything for at least 10 years, uncertified)

23- Certified Chef with no history

24- Certified Chef with history

25- Certified chef with good history

26- Certified Chef with Name recognition.

27- Former owner of their own restaurant with knowledge of everything pertaining to the culinary world.

28- Former owner of their own restaurant with knowledge of price points, inventory control, and a sparkling personality..

29- 23 yr old female functioning alcoholic, first time waitress with good taste and has sex with you.

30- Serious cook that cares about everything and knows that manning the grill = sex.

30+= Yourself.
